Red Quinoa with Mixed Vegetables and Beans
Picture this:  It’s 8:30pm, you’ve just returned from class and still have quite a bit of studying to do for tomorrow’s exam.  ALL YOU WANT IS PIZZA.  Pizza. Pizza. Pizza.  But your conscience remembers all those lovely fresh vegetables you bought this morning and you are guilted into making dinner.
And yet!  This dinner was prepared in about 25 minutes with minimal effort.  I’ve been making sure to keep grains and beans in stock in the pantry, so all I had to do was pull out a jar of quinoa and a can of chick peas and from there dinner was easy.
You’ll Need:
1/2 cup red quinoa
1 zucchini
1 bell pepper (I used green because… it was the cheapest!)
1 shallot
1 15oz can chick peas (I use low sodium)
1 tbsp oil
3 tbsp red wine vinegar
thyme and cayenne pepper make it yummier.
Method:
Cook the quinoa - it’s a 1:2 ratio of quinoa to water.
Chop the vegetables and saute the shallots in olive oil.  Add zucchini, pepper and beans and cook for 5 minutes.  Add red wine vinegar and spices, cook for another 10-15 minutes, until zucchini is at desired consistency.  I like to leave it a bit firm.
Combine with quinoa.  Rejoice at what you’ve made.

We asked stars Robert Downey Jr and Jude Law about the friendship between them, both on and off screen.

Happy 50th to The Phantom Tollbooth! I’ve been looking for a chapter book that includes lots of illustrations and this could be the one! Plenty of cool Jules Feiffer sketches to keep certain five-year-olds minds from wandering.

I loved it as a kid, just like I loved the Narnia books, The Mixed Up Files of Mrs. Basil E. Frankweiler, A Wrinkle in Time and other books where normal kids manage to find themselves in extraordinary situations. And can you believe that when The Phantom Tollbooth was published back in 1961, people thought fantasy was bad for kids because it disorients them. True story! Well, if you believe that, have I got a Horcrux for you!
